A good dinner: Sohla's Spiced Cauliflower with Chickpeas
Over on Instagram, chef and Internet celeberity Sohla El-Waylly has been doing a series of "dinners you can make no matter how hungry or tired you are." One of the recipes that caught my eye was an all-veggie, one-pan dinner featuring cauliflower and chickpeas, two of my favorites.
Since I like to store recipes in the Paprika app, I copied it from the video description for easier access. And since I've been making it so much, I wanted to share the original recipe along with some tweaks I've been making when I cook it.
Spiced Cauliflower with Chickpeas & Couscous #

Ingredients #
- Olive oil
- 1 pound frozen cauliflower florets
- 1 (15 ounce) can chickpeas, drained
- 1 to 3 tablespoons harissa
- ½ teaspoon ground allspice
- ½ teaspoon ground turmeric
- Salt and pepper, to taste
- 1 ½ cups broth
- 1 cup couscous
- 8 ounces feta
Instructions #
- Heat a medium skillet over medium-high until very hot (a splash of water should instantly sizzle away). Add enough oil to generously coat the bottom of the pan, then add the cauliflower. Cook, stirring occasionally, until browned and tender, about 10 minutes.
- Add the chickpeas, harissa, allspice, turmeric, salt, and pepper. Cook until the spices are aromatic and the harissa caramelizes, about 1 minute.
- Add the broth, taste and adjust seasoning as needed, and bring to a simmer. Add the couscous, and stir well. Cover, turn off the burner, and steam until tender, about 10 minutes.
- Stir to fluff, crumble over the feta, and serve.
My tweaks #
- Since I try to limit my carbs for blood sugar reasons, I prepare this without couscous. Since I don't include the couscous, I also add less broth (only 1 cup), since nothing will be absorbing it.
- I use cumin instead of allspice, just as a matter of preference.
- I add some frozen chopped spinach, just for a little more substance and some green.
I know there are lots of "30 minute one pot" recipes out there that really aren't, but for me, this one legitimately is. Plus it's healthy enough that I can eat a lot of it and walk away feeling satisfied and not gross.
